Addison’s Wonderland Weight Loss Meal Plan- Weeks 1 & 2!

Yes, this is KIND OF like my last post just hopefully better. You know when you do or try something for the first time and then you figure out a better way and you’re like dang, why didn’t I try that to begin with?!? So after lots of e-mails and several great blog comments, I have decided to try last week’s post again. But better. Except this time with your ideas and suggestions. Still with me???

PLUS, I kind of wanted to start a group… a movement. Okay, movement may be a little too fancy. More like a group of us that need to lose 5-100+ pounds or who just want to get healthy… who all want to join together to get inspiration, share ideas, get motivated and hold each other “virtually accountable” all in one place. And that place would be RIGHT here. So if you’ve read “My Weight Loss Story” and you were even a little bit motivated to FINALLY get healthy, you’ve come to the right post. I would LOVE for EVERYONE who wants to start this journey together to say so in the comments below. It can be as simple “I’m in!”

To be completely honest, when I first posted my weight loss story I was completely unsure about even posting it to begin with. Not the most flattering of images along with not the most wonderful weight gain story to share all coming from a girl with zero expertise in the health or fitness industries. And then my story kind of went viral. It was shared on several websites and has been read over 200,000 times. I became flooded with the most amazing stories and some of them so personal. I fell in love with the fact that people felt like they knew me and could share such raw and real emotions with me virtually. So then I decided to share some much requested random meal ideas. Nothing fancy and not really even anything I would call a “recipe”. And once again, one of my “more read” posts. Mark has gotten a total kick out of it because I HATE to cook. And I HATE to grocery shop. But then he said tonight that he thought that was exactly what resinated with some of you. Because there are probably so many of you who are just like me. Totally intimated by all of the fancy recipes and lengthy shopping lists plus absolutely zero time to do it all. My goal is to create the easiest of meal planning, the easiest grocery shopping ideas and the quickest things to cook and prepare. Ever.

So here’s what I’ve changed. First, I’ve added a downloadable grocery list. Please bare with me as this is a first for me! My goal in meal planning is to create the most meals out of the least purchases at the store. That is why you will be purchasing LOTS of each item. Next, I’ve added back the “Pin It” option so you can Pin my recipes to Pinterest and save them to your Recipe Boards. And PLEASE DO because that helps me a ton!! Hehe… shameless begging.

Don’t worry, all of this will NOT take over my blog. You’ll still be bombarded with everything home related with some occasional fashion posts. You will still get every last detail of Our Historic Wonderland along with a peek into our crazy lives. BUT my plan is to post a NEW shopping list with NEW meal ideas once every two to three weeks. Shooting for every two weeks but saying three worst case. For as long as you guys are interested. So I would LOVE your feedback!

BREAKFAST

Healthy Food Breakfast Meal Ideas

Avocado Toast

7 Sprouted Grains Bread

1/2 Avocado

A Splash of Lemon or Lime Juice

A Dash of Salt & Pepper

Simply toast a piece of bread, scoop out half of an avocado and spread it onto the bread and finish it off with a splash of lemon juice and a dash of salt and pepper!

LUNCH

Healthy Food Meal Dinner Ideas 2

Superfood Salad

One Bag Kale Chopped Salad (I omit the croutons)

One Avocado

10 Cherry Tomatoes

Meat of Your Choice (I use a leftover from the night before)

Mix it all together and then top it off with the meat of your choice! I save half of the salad before adding the meat for a dinner side that evening.

SNACKS

Healthy Snack Ideas- 1

Small Handful of Pistachios

Slice of Fresh Mozzarella

Banana w/ 1-2 Tbsp Peanut Butter or Almond Butter

Mini Peppers w/ Hummus

Carrot Chips w/ Hummus

Small Piece of Fruit

DINNER

Healthy Food Meal Dinner Ideas 1

Chicken Salad Lettuce Wraps

3-4 Chicken Breasts

15-20 Grape Tomatoes

1/2-1 Cup Plain Greek Yogurt

One Small Onion

One Package Lettuce

A Small Handful of Seeds (not pictured)- I love adding Pepitas!

Cook the chicken until tender. I love cooking it in the crockpot on low for 2-3 hours because it shreds so easily! Once it has cooled, shred or dice the chicken. Slice a small onion and a package of grape tomatoes. Add 1/2-1 cup plain greek yogurt and mix well. Add sliced onions, tomatoes, seeds and any other healthy ingredients you love!

Taco Bowl

One Package Ground Turkey or Chicken

One Small Onion

Salsa

One Avocado

Simply brown the ground turkey or chicken and top it off with a diced onion, sliced avocado and a spoon full of salsa!

THE PLAN…

For breakfast and lunch, I eat the exact items above… Avocado Toast for breakfast and Superfood Salad for lunch… every single day for about two weeks.

Here’s what I typically do for dinner… I prepare enough of the two meals above for two nights each and then alternate with a simple fish, veggie and salad dinner to change things up. So for six nights of meal planning, I would do something like this…

Monday- Chicken Salad Lettuce Wraps, Veggie & Superfood Salad

Tuesday- Taco Bowl

Wednesday- Grilled Fish, Veggie & Superfood Salad

Thursday- Chicken Salad Lettuce Wraps, Veggie & Superfood Salad

Friday- Grilled Fish, Veggie & Superfood Salad

Saturday- Dine Out

Sunday- Taco Bowl

The plan above means I am MAYBE cooking 3-4 nights a week and the other 2-3 nights are leftovers from when I over-prepared earlier in the week. The superfood salad side we eat at dinner is leftover from the salad I prepared that day for lunch or even vice vera if you need a quick lunch to grab on the go!

Two Final Things…

WATER

Hiding in the back of my grocery stash, you will see two bottles of water. They’re 9.5 pH waters I found at my local Kroger store. I absolutely SWEAR BY drinking highly alkaline water. It all began when I was diagnosed six years ago with a bladder disease called IC. It is beyond miserable yet I was determined to avoid prescription medications at all costs. I researched and tried every method possible to calm the pain from this disease. Literally the very last thing I tried in a desperate attempt to feel better was alkaline water. Although the pain is definitely still there and will always be something I deal with since it is an incurable disease, I have found the most relief from this method. It is also so wonderful (in my opinion) for overall health and weight loss. Creating an alkaline body has been proven to prevent disease and have so many wonderful benefits. I purchase 5 gallon jugs of alkaline water at my local health food store that I use during the week but then always grab some smaller bottles to drink while on the go and refill with our water at home.

PROBIOTICS

Another important aspect of weight loss (in my opinion) is probiotics. All of the antibiotics we take over the course of our lives along with the overall poor diets most of us consume on a daily basis equal poor “gut health”. Kiefer Milk is a great source of live priobiotics and good bacteria. I would highly suggest this and my kiddos love it too!
