Now let’s get to TACO TUESDAY!!! Pretty much every single Tuesday night, we make tacos. It was never a “tradition” for us really until I met John and those boys LOVEEEEE some tacos. We have most definitely continued that tradition as a family but to be completely honest, I’ve gotten a bit over it over the years. I don’t eat beef and John doesn’t eat fish so there isn’t too too much we can change up. It’s usually a quick taco kit and some paper plates and dinner is done! Which is nice BUT I decided to change things up this week with homemade tortillas and a cutesy dinner setup.

When I was going through some tough times and big life changes back in 2019, as silly as it sounds, I found that making the little things more fun really helped me to stay positive and have little things to look forward to. The girlies and I got into the tradition of setting the table all pretty each night with nice plates and cloth napkins. Winnie always loved putting her own touches into the decor each night. We kept it up for at least a year but as we became a family of six and things got busier, we got back into the paper plates and paper towels kind of dinners. Absolutely NOTHING wrong with that but I thought it would be fun to put a little more thought and time into our Tuesday night tradition.

Last week I got onto Walmart and using my Walmart+ free shipping benefit, I ordered the CUTEST new additions to our weekly Tuesday dinners! P.S. Keep scrolling for how we made homemade tortillas!

Homemade Tortillas

Ceramic Tortilla Dish

Homemade tortillas are sooooo good and super easy! To make the dough, place 2 cups of Maseca corn flour into a bowl. Begin by mixing in around 3/4 cup of warm water then continue to mix and add small amounts of water until it has reached a hard but not crumbly consistency. Once you mix to a good consistency, round into around 1.5 inch balls. Then press them with a tortilla presser between parchment paper or even two ziploc bags in order to prevent sticking.

To cook, heat up around 1″ peanut oil in a saucepan at medium heat until hot. Carefully place one tortilla shell and let cook until bubbles form and the shell feels hard. Then, flip over (I usually use two spatulas for this) and cook until golden brown. Place them between paper towels to prevent sticking and to soak up some of the oil until they’ve cooled appropriately.

Addie makes them for us and they’re so yummy!
